Last year, my husband and I had a craving for crab legs. At that time, we did not want to prepare them ourselves; we simply wanted to enjoy the sunshine and relax at a restaurant we were very familiar with — Red Lobster.

In 2023, I was diagnosed with Type 2 Diabetes, necessitating a swift change in my dietary habits. However, I assumed that a plate of crab legs and a low-calorie drink would not be too much to ask. It was a beautiful day, and our waitress was very nice. The place was nearly empty, which is quite different from how Red Lobster was in the 90s.

We received our menus, but I already knew what I wanted: a plate of crab legs with a side of broccoli and cranberry juice. My husband ordered something similar. The waitress looked relieved that it was an easy order, and we laughed with her and exchanged pleasant conversation. She mentioned that it was her last day, and we were sorry to hear that. She did not want us to be sorry, though — she wanted to move on to something better, and I don’t not blame her.

After a few moments, the young woman came out with a sad look on her face.
